No cada dia tens l’oportunitat d’explicar la història d’un territori davant d’algunes de les professionals més influents del món de la gastronomia.
Aquest any, la Diputació de Barcelona i l’Agència Catatana de Turisme van confiar en nosaltres per conduir una experiència molt especial dins del programa del Parabere Forum, un dels congressos gastronòmics internacionals més rellevants dedicat a donar visibilitat al talent femení en la gastronomia, la recerca i la cultura alimentària.
La proposta era clara: portar fins a Barcelona una part de la història i del paisatge de Cardona a través d’una experiència sensorial. Així va néixer aquest Tast de la Sal, una activitat que desenvolupem conjuntament amb la Fundació Cardona Històrica per donar a conèixer la sal de Cardona i els productors del territori.

Una muntanya que abans era un mar
Tot comença amb una història sorprenent: la de la Muntanya de Sal de Cardona, formada fa milions d’anys quan un antic mar interior es va evaporar i va deixar al descobert una de les formacions de sal més singulars d’Europa.
Durant més de 6.000 anys, la sal s’ha extret d’aquest lloc. Un mineral que no només ha condimentat aliments, sinó que ha determinat rutes comercials, economies i formes de vida.
La sal ha estat poder, conservació, comerç i cultura. I també ha estat present, de manera silenciosa, a les cuines de totes les èpoques.

Un viatge per la història a través del gust
La proposta del tast no era només degustar sal, sinó entendre com aquest mineral ha influït en la gastronomia al llarg de la història.
A través de petites degustacions i combinacions senzilles, les participants van poder experimentar com la sal transforma els aliments i també el vi. Durant l’experiència es van tastar diferents productes del territori, com fuet de @cal_fusteret i un formatge de vaca curat elaborat amb la pròpia sal de Cardona de @calmusicformatgeria, que ajudaven a entendre com aquest mineral ha estat clau en la conservació i en la identitat de la nostra gastronomia.
- Una gota de cítric amb sal per descobrir com realça els sabors.
- Anxova amb vi blanc per entendre l’equilibri entre salinitat i frescor.
- Productes del territori que connecten gastronomia, història i paisatge.
La sorpresa per a moltes participants va ser descobrir que la sal no només sala: revela sabors, equilibra i transforma.

Cardona explicada a professionals de tot el món
El Parabere Forum reuneix cada any cuineres, investigadores, periodistes i professionals del sector gastronòmic d’arreu del món. Compartir amb elles la història de la sal de Cardona va ser també una manera de posar en valor el patrimoni i els productes del nostre territori.
La resposta de les participants va ser entusiasta. Moltes van descobrir per primera vegada la relació entre la sal, la conservació dels aliments i l’evolució de la gastronomia mediterrània.

Una experiència més enllà del tast
Participar en el Parabere Forum ha estat també una gran experiència per a nosaltres com a projecte. Vam tenir l’oportunitat d’assistir a la jornada del dilluns al Paranimf de la Universitat de Barcelona, un espai espectacular on es van reunir professionals de la gastronomia, la recerca i la cultura alimentària d’arreu del món.
Durant el dia es van compartir ponències i converses amb algunes de les veus més interessants del panorama gastronòmic internacional. Per a nosaltres va ser especialment enriquidor poder escoltar i aprendre de tantes mirades diferents dins del món de la gastronomia.
La jornada va acabar amb un sopar molt especial a les Drassanes de Barcelona, en un ambient únic que va reunir totes les participants del fòrum en una celebració de la gastronomia, el territori i les persones que hi treballen.

Volem agrair especialment a Maria Canabal, presidenta del Parabere Forum, la feina extraordinària que fa impulsant aquest projecte i la confiança d’haver-nos convidat a formar part d’aquesta edició.

Des de Slow Turisme creiem que els productes del territori s’entenen millor quan es poden tocar, tastar i explicar en el mateix lloc on han nascut. I experiències com aquesta ens recorden que, quan el territori s’explica amb autenticitat, el relat pot arribar molt més lluny del que imaginem.
The story of Cardona salt arrives at the Parabere Forum
It is not every day that you have the opportunity to share the story of a territory with some of the most influential professionals in the world of gastronomy.
This year, the Diputació de Barcelona and AgCatTurisme entrusted us with leading a very special experience as part of the programme of the Parabere Forum, one of the most relevant international gastronomy forums devoted to highlighting female talent in gastronomy, research and food culture.
The idea was simple: to bring part of Cardona’s history and landscape to Barcelona through a sensory experience. This is how our Salt Tasting was born, an activity developed together with the Fundació Cardona Històrica to promote Cardona salt and the producers of the area.

A mountain that was once a sea
The story begins with the Cardona Salt Mountain, formed millions of years ago when an inland sea evaporated and left behind one of the most unique salt formations in Europe.
For more than 6,000 years, salt has been extracted from this place. A mineral that has not only seasoned food, but also shaped trade routes, economies and ways of life.
Salt has meant power, preservation, trade and culture. And it has quietly been present in the kitchens of every era.

A journey through history through taste
The tasting was not only about sampling salt, but about understanding how this mineral has influenced gastronomy throughout history.
Through small tastings and simple pairings, participants experienced how salt transforms food and wine. During the experience they tasted local products such as fuet ( @cal_fusteret ) and a cured cow’s milk cheese made using Cardona salt, (@calmusicformatgeria) helping them understand how this mineral has played a key role in food preservation and in the identity of local gastronomy.
- A drop of citrus with salt to discover how it enhances flavours.
- An anchovy with white wine to understand the balance between salinity and freshness.
- Local products connecting gastronomy, history and landscape.
For many participants, the surprise was discovering that salt does not simply make food salty: it reveals flavours, balances and transforms.

Sharing Cardona with professionals from around the world
The Parabere Forum gathers chefs, researchers, journalists and gastronomy professionals from all over the world. Sharing the story of Cardona salt with them was also a way of showcasing the heritage and products of our territory.
The response from the participants was enthusiastic, and many of them discovered for the first time the relationship between salt, food preservation and the evolution of Mediterranean gastronomy.

An experience beyond the tasting
Taking part in the Parabere Forum was also a remarkable experience for us. We had the opportunity to attend Monday’s programme at the Paranimf of the University of Barcelona, a spectacular venue where professionals from gastronomy, research and food culture from around the world came together.
Throughout the day, talks and conversations brought together different perspectives on food culture, heritage and sustainability.
The day ended with a special dinner at the Drassanes of Barcelona, where participants gathered in a unique setting to celebrate gastronomy, territory and the people behind it.

At Slow Turisme, we believe that local products are best understood when they can be touched, tasted and explained in the very place where they are born. Experiences like this remind us that when a territory is told with authenticity, its story can travel much further than we imagine.
